Date Caramel

A tasty treat to satisfy that sweet tooth without spiking blood sugar levels. Dates are high in fiber which is great for digestion and can help lower cholesterol. They are also full of antioxidants which can help with brain health.

In this recipe, I use cashew butter to help get the creamy texture of caramel. Cashews contain healthy fats that also help reduce bad cholesterol which can lead to reduced risk of heart disease and stroke. Cashews are rich in zinc which is a great immune system booster. They also contain magnesium which is essential for bone health.

Ingredients

6 Dates

2 Tbsp Cashew Butter

1 Tbsp Vanilla

1 Pinch of Pink Himalayan Sea Salt


  1. Soak pitted dates in warm water until they become soft. 

  2. Drain dates and save the water. 

  3. Add dates, cashew butter, vanilla, salt, and a splash of date water to a blender or food processor. 

  4. Blend until smooth consistency. Add a little more date water until you get your desired texture.
